Habanero Cheddar Cornbread Waffles

Some say you can waffle iron anything. We mostly agree with this statement.

So we held a Yellowbird waffle-off and here’s our winning recipe—a savory, spicy, and slightly sweet treat, all wrapped into one fluffy waffle.

Preparation: 5 minutes

Cook: 15 minutes

Serves: 6

Ingredients:

FOR THE DONUTS

  • 2½ tsp. baking powder
  • 1 1/2 C. All-Purpose Flour
  • 1 C. Cornmeal, Medium Grind
  • 2 Tbsp. Sugar
  • 2 Tsp. Baking Powder
  • 2 Tsp. Baking Soda
  • 1 Tsp. Salt
  • 2 C. Whole Milk
  • 6 Tbsp. Butter, Melted
  • 2 Eggs
  • 2 C. Cheddar Cheese, shredded
  • 1/2 C. Yellowbird Habanero Hot Sauce

FOR THE TOPPING

  • 1/4 C. Fresh Blueberries
  • 1 C. Maple Syrup

Preparation:

  1. Preheat waffle iron at medium temperature.

  2. Whisk together the dry ingredients.

  3. In a smaller bowl, whisk together the milk, eggs, and Yellowbird Habanero Hot Sauce.
     
  4. Add the wet ingredients to the dry, folding together until just combined. Don’t overmix. The batter should be shaggy versus smooth.

  5. Add in the melted butter and cheese, folding together gently.

  6. Grease the waffle maker, then add about 3/4 cup of batter for large waffles.

  7. Top with fresh blueberries and maple syrup or honey of your choice. We're partial to Treehive—it has both ;)
