2 large beets, peeled and chopped into 1-inch cubes

Instructions:

Preheat oven to 350°F.

Toss the chopped beets with olive oil, salt, and pepper. Spread them on a roasting pan and bake for 40-45 minutes, or until tender.

While the beets roast, prepare the Plum Reaper Goat Cheese spread: In a small bowl, combine goat cheese, honey, and Yellowbird Plum Reaper Hot Sauce. Beat with a hand mixer until smooth and creamy. Set aside.
