Plum Reaper Beet + Farro Salad

Here’s What You’ll Need:

  • 2 large beets, peeled and chopped into 1-inch cubes

  • 1 cup farro, cooked according to package

  • 1/4 cup chopped red onion

  • 1/4 cup Yellowbird Plum Reaper Hot Sauce, plus extra for drizzling

  • 1/8 cup honey

  • 4 ounces goat cheese, softened

  • 2 tablespoons olive oil

  • Fresh mint for garnish

  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 350°F.

  2. Toss the chopped beets with olive oil, salt, and pepper. Spread them on a roasting pan and bake for 40-45 minutes, or until tender.

  3. While the beets roast, prepare the Plum Reaper Goat Cheese spread: In a small bowl, combine goat cheese, honey, and Yellowbird Plum Reaper Hot Sauce. Beat with a hand mixer until smooth and creamy. Set aside.

  4. On a serving plate, spread the Plum Reaper Goat Cheese mixture as a base. Top with cooked farro, roasted beets, and chopped red onion.

  5. Garnish with fresh mint leaves and an extra drizzle of Plum Reaper Hot Sauce.

  6. Serve immediately and enjoy!
