Plum Reaper Fall Salad

Plum Reaper, kale, roasted sweet potatoes, and a sprinkle of goat cheese make for a salad that’s equal parts fresh, fiery, and totally crave-worthy.

Cook Time: ~25 min (to roast those sweet potatoes)

For the Vinaigrette

Ingredients:

  • Mix all ingredients to combine.

For the Salad

Ingredients:

  • 1 1/2 cups roughly chopped kale
  • 1/4 cup brussel sprouts
  • 1/2 cup cubed roasted sweet potatoes
  •  2 tbsp crumbled goat cheese
  • 1/8 cup diced fresh plum

Instructions:

  1. Assemble all produce and goat cheese in a large bowl.
  2. Drizzle Plum Reaper Vinaigrette to taste.
  3. Toss to combine.
